Canning time

It is that time of year again. Canning time. It goes all summer long but this is the time of year that my water bath gets most of its work done at my house.

Sometimes I wonder why I go through the mess of canning. My kitchen becomes a huge sticky mess, but then in the middle of winter I can go and open up a jar of peaches, or pears, or applesauce, and have that glorious taste and smell that would otherwise elude me until late summer again.

I was fortunate to have grown up in a home where my mom canned every year. She didn’t always can the same things every year, but something was always going on in that department. I have taken after her where I don’t can everything every year I usually do enough to get through two years then on the off year do other things. Like this year will be peaches and pears, next year will be applesauce and pickles. It works well this way and I don’t feel like I am being rushed for the next crop coming in.

This fall I will be using the pressure cooker by myself for the first time. I have done it so many times before, but it has always been under the supervision of my mom. This year I am going to try it on my own. Wish me luck.

    I've never canned, but I've been thinking about it since I posted my Great-Great-Grandmother's recipe. My Mom used to can when we were very young; not since so though. I think it sounds wonderful, but I'm not so sure I have the time and patience to devote to it.

    I make jam every year, salsa and applesauce occasionally. I wish I canned more! Do you have pear, peach and apple trees, or do you buy your produce from somewhere?
